Sakarin (C7H5NO3S) merupakan pemanis buatan yang digunakan masyarakat sebagai pengganti gula karna rasanya yang manis, sifatnya yang stabil dan bermanfaat bagi penderita diabetes untuk mengurangi kalori, Penggunaan sakarin dapat menimbulkan efek samping akut pada gangguan tenggorokan berupa batuk dan radang serta efek samping kronis seperti mual, muntah dan kanker kandung kemih. Produk minuman yang menggunakan sakarin di antaranya adalah minuman ringan (soft drinks). Produk minuman ringan salah satunya yaitu minuman teh. Minuman teh masih menjadi peminat konsumen yang unggul, Produk teh ialah minuman mengandung kafein, dibuat dengan cara menyeduh daun, pucuk daun, atau tangkai daun yang dikeringkan dari tanaman Camellia sinensis. Penelitian ini menggunakan 5 (lima) sampel minuman es teh solo yang dijual disekitar wilayah pamulang timur. Penelitian bertujuan untuk mengetahui keberadaan dan konsentrasi sakarin dalam sampel minuman es teh manis di sekitar pamulang timur dengan mengacu pada persyaratan yang ditetapkan oleh Kepala Badan Pengawas Obat dan Makanan No.4 tahun 2014 tentang batas penggunaan maksimum bahan tambahan pangan sakarin yaitu 300 mg/kg. Metode yang digunakan yaitu uji kualitatif menggunakan Metode Uji Reaksi Warna dengan perekasi resorsinol dan uji kuantitaif dengan Metode Spektrofotometri Uv-Vis. Hasil penelitian Uji kualitatif menunjukkan bahwa ke 5 sampel minuman es teh manis semuanya negatif sakarin dengan ditandai tidak adanya perubahan warna hijau fluoresensi pada sampel. Uji kuantitatif menunjukkan Kadar sakarin pada ke 5 sampel yang di uji yaitu sampel 1 sebesar 35,54 mg/kg, sampel 2 sebesar 16,18 mg/kg, sampel 3 sebesar 87,18 mg/kg, sampel 4 sebesar 757,8 mg/kg dan sampel 5 sebesar 542,8 mg/kg dan didapatkan nilai koefisien korelasi yaitu 0,9268 yang memenuhi kriteria <1 dengan nilai LOD sebesar 27,13 mg/ml dan nilai LOQ sebesar 90,45 mg/ml. Untuk sampel teh nilai LOD sebesar 3, 225 mg/ml dan nilai LOQ sebesar 10,753 mg/ml. Kesimpulan penelitian ini yaitu 5 sampel minuman es teh manis yang dijual disekitar pamulang timur tidak mengandung sakarin serta sampel ke 4 dan 5 kadarnya tidak memenuhi persyaratan yang ditetapkan oleh Kepala Badan Pengawas Obat dan Makanan No.4 tahun 2014.
This study, titled 'Qualitative and Quantitative Analysis of Saccharin Levels in Sweet Iced Tea Drinks in East Pamulang,' addresses a critical public health concern regarding the use of artificial sweeteners in popular beverages. Saccharin, while offering benefits for calorie reduction for individuals with conditions like diabetes, carries known health risks ranging from acute throat irritation to chronic conditions such as bladder cancer. Given the widespread consumption of sweet iced tea in local communities, investigating the presence and concentration of saccharin in such products is highly relevant. The research aimed to determine both the existence and quantity of saccharin in five samples of 'es teh solo' sold in East Pamulang, comparing findings against the Indonesian National Agency of Drug and Food Control (BPOM) maximum permitted limit of 300 mg/kg. Employing a dual-approach methodology, the study utilized a qualitative color reaction test with resorcinol and a quantitative UV-Vis Spectrophotometry method. The qualitative analysis indicated the apparent absence of saccharin in all five samples, as evidenced by no observed fluorescent green color change. However, the quantitative results presented a more complex picture. While samples 1, 2, and 3 showed saccharin levels well below the BPOM limit (35.54 mg/kg, 16.18 mg/kg, and 87.18 mg/kg respectively), samples 4 and 5 were found to contain significantly higher concentrations at 757.8 mg/kg and 542.8 mg/kg. These latter values substantially exceed the regulatory threshold. The methodological robustness was supported by a correlation coefficient of 0.9268, with reported LOD and LOQ values providing context for the detection capabilities of the quantitative method. A major point of concern arises from the abstract's conclusion, which states that all five samples "did not contain saccharin," a statement that directly contradicts the subsequent quantitative findings for samples 4 and 5. This critical discrepancy between the qualitative (negative for saccharin) and quantitative (present, and often excessive) results needs thorough clarification. If the qualitative test is insufficiently sensitive or specific, it could provide a false sense of security to consumers. Conversely, if the quantitative method has issues, the alarm raised could be unwarranted. Regardless, the quantitative data for samples 4 and 5 highlights a potential public health risk that warrants immediate attention and further investigation. Future research or regulatory checks should aim to clarify this contradiction, potentially by re-evaluating the sensitivity and specificity of the qualitative test or replicating the quantitative analysis with robust validation. This study underscores the critical importance of rigorous and consistent analytical testing in safeguarding consumer health, particularly in widely consumed local beverages.
