Abstract

Keberadaan kecoa di kantin dan kurangnya higiene sanitasi merupakan masalah yang sering dijumpai, berpotensi menimbulkan risiko kesehatan bagi konsumen. Penelitian ini bertujuan untuk menggambarkan penyajian, pengemasan, persiapan, dan pengolahan pangan di gerai kantin Universitas Muhammadiyah Jakarta (UMJ) Kampus A Cireundeu pada tahun 2024. Metode observasi digunakan untuk mengumpulkan data dari gerai kantin mengenai praktik higiene dan sanitasi. Hasil penelitian menunjukkan bahwa sebagian besar gerai telah menerapkan prosedur yang memadai dalam menjaga keamanan dan kebersihan pangan. Namun, masih terdapat beberapa kelemahan, seperti penggunaan wadah pengemasan yang tidak memenuhi standar, kurangnya penggunaan alat pelindung diri (APD) oleh penjamah makanan, dan kondisi ventilasi yang buruk di beberapa gerai. Kesimpulan dari penelitian ini adalah bahwa meskipun gerai kantin di UMJ Kampus A umumnya telah mematuhi standar higiene dan sanitasi, perlu adanya peningkatan dalam aspek penyimpanan pangan mentah, pengemasan makanan, dan penggunaan APD untuk memastikan keamanan pangan yang lebih baik bagi konsumen.

This study provides a timely examination of hygiene and sanitation practices within the Universitas Muhammadiyah Jakarta (UMJ) Campus A canteens, addressing a pertinent public health concern related to food safety for university students and staff. The research aimed to describe various aspects of food handling, including presentation, packaging, preparation, and processing. Employing an observational methodology, the study revealed that while most canteen stalls generally adhere to adequate hygiene and sanitation procedures, several critical areas require improvement. In conclusion, while the study offers an important preliminary assessment of canteen hygiene and sanitation at UMJ, the absence of data regarding cockroach density, as indicated in the title, needs to be addressed for clarity and completeness. Nevertheless, the identified weaknesses regarding packaging, PPE, ventilation, and raw food storage provide clear actionable insights for the university and canteen management. Implementing targeted interventions and training programs in these specific areas would significantly enhance food safety standards and reduce potential health risks for consumers. Future research would benefit from a more comprehensive approach that fully integrates all aspects promised by the study's title, offering a holistic view of food environment safety.
