Pola konsumsi pangan rumah tangga merupakan salah satu faktor yang berperan penting dalam menentukan kualitas gizi anggota keluarga. Keragaman jenis pangan, frekuensi konsumsi, serta metode pengolahan makanan dapat memengaruhi kecukupan zat gizi yang dikonsumsi. Penelitian ini bertujuan untuk menganalisis pola konsumsi pangan rumah tangga menggunakan metode Food Telephone Recall pada satu rumah tangga di Kota Medan. Penelitian menggunakan desain deskriptif dengan pendekatan studi kasus. Data dikumpulkan melalui wawancara Food Telephone Recall selama tujuh hari berturut-turut yang mencakup informasi mengenai jenis makanan, jumlah konsumsi, kelompok pangan, dan metode pengolahan makanan. Hasil penelitian menunjukkan bahwa konsumsi pangan rumah tangga didominasi oleh kelompok sumber karbohidrat berupa nasi putih dan kelompok protein hewani seperti telur, ayam, ikan, udang, serta daging. Konsumsi sayuran dan buah-buahan ditemukan hampir setiap hari, namun frekuensinya masih lebih rendah dibandingkan kelompok pangan lainnya. Metode pengolahan yang paling sering digunakan adalah penggorengan. Secara keseluruhan, rumah tangga yang diamati memiliki keragaman pangan yang cukup baik, tetapi pola konsumsi masih cenderung berfokus pada sumber energi dan protein hewani. Metode Food Telephone Recall dapat digunakan sebagai alternatif untuk menggambarkan pola konsumsi pangan rumah tangga secara praktis dan berkelanjutan.
This study presents an analysis of household food consumption patterns, emphasizing its importance for family nutritional quality. Utilizing a descriptive case study approach, the research focuses on a single household in Medan, employing the Food Telephone Recall (FTR) method over seven consecutive days to gather detailed dietary information. Key findings reveal a diet predominantly composed of white rice and various animal proteins (eggs, chicken, fish, shrimp, meat). While fruits and vegetables are consumed daily, their frequency is notably lower than other food groups, with frying identified as the most common cooking method. The paper concludes that the observed household demonstrates fair dietary diversity, albeit with a clear focus on energy and animal protein sources, and proposes the FTR method as a practical and sustainable tool for assessing household dietary patterns. A significant strength of this work is its exploration of the Food Telephone Recall method, offering a timely and practical alternative for dietary assessment, particularly relevant in contexts where traditional face-to-face methods might be challenging. The detailed 7-day recall period offers a rich, albeit narrow, snapshot of the observed household's specific consumption habits. However, the primary limitation lies in the extremely restricted sample size—a single household. While fitting for a case study, this severely curtails the generalizability of the findings, making it difficult to draw broader conclusions about "household food consumption patterns" beyond the specific case studied. The depth of nutritional analysis also appears limited to food group categorization rather than comprehensive nutrient intake. To enhance the academic impact and utility of this research, future studies should aim to significantly expand the sample size, incorporating a more diverse representation of households across different socioeconomic backgrounds and geographical locations. Integrating quantitative nutritional analyses, such as calculating macronutrient and micronutrient intake, would provide a more robust assessment of dietary quality. Furthermore, a comparative analysis with established dietary assessment methods could help validate the efficacy and accuracy of the Food Telephone Recall method more rigorously. Despite the current limitations in generalizability, this study successfully showcases the practical potential of FTR as a viable tool for dietary data collection, laying groundwork for more extensive investigations.
